Best Pumpkin Spice Protein Pancakes | No Excuse Girl


I searched everywhere for the best pumpkin spice protein pancakes, but couldn't find one that I really loved.  I worked on this recipe for around a month, and now I finally figured the perfect blend of ingredients to capture the flavors of pumpkin spice!  The smell makes me feel so warm and fuzzy inside, a perfect breakfast for the Holiday Season.  Can't you just hear those sleigh bells jingling?


Best Pumpkin Spice Protein Pancakes-Ingredients:

3 Tbsp Coconut Flour
1/4 tsp baking powder
1 scoop chocolate protein powder
1 tsp cinnamon
1/4 tsp cloves
1/4 tsp nutmeg
1 whole egg
1/3 cup egg whites
1 Tbsp Pumpkin Puree
Coconut oil


Sugar-free maple syrup


Optional Toppings:
Fruit and nuts of your choice


Best Pumpkin Spice Protein Pancakes-Instructions:

1.  In a medium sized bowl, mix together the dry ingredients (coconut flour, baking powder, protein powder, cinnamon, cloves, and nutmeg).

2.  In a separate bowl, whisk the whole egg and egg whites together.  Mix the pumpkin puree into the egg mixture.

3.  Mix the egg mixture with the dry ingredients, stirring together to form your pancake batter.
4.  Heat the coconut oil on a pan on medium to high heat.
5.  Pour the batter onto the pan, forming small circles in the size of the pancakes you would like.
6.  Cook one side thoroughly, then flip and cook the other side.
7.  Repeat  this steps until you have used all of the batter.
8.  Enjoy the best pumpkin spice protein pancakes you'll ever eat!
